Macaroni Pie is a popular Caribbean dish and is a staple in many homes in Trinidad and Tobago. There are many variations of making Macaroni Pie including with breadcrumbs or different types of pasta. Below is a very quick and easy recipe.
Ingredients:
- 500g Macaroni Pasta
- 2 Eggs
- 2 1/2 cups Evaporated Milk (I use full cream milk if I don’t have evaporated works just as well)
- ¼ tsp Salt
- ¼ tsp Black Pepper
- 1 tsp Mustard
- 1/2 tsp Italian herbs
- 1/2 tsp All Purpose Seasoning
- a pinch of cayenne pepper and paprika (optional)
- 3½ or more cups grated strong cheddar cheese (reserve ½ cup for topping)
Method:
- Add Water, Italian Herbs and Salt to a saucepan and bring to the boil.
- Add your Macaroni to the boiling water and cook until tender (Approx 10-12 minutes) and drain.
- Beat eggs until fluffy then combine macaroni, eggs, cheese, milk, all-purpose seasoning, salt and pepper.
- Grease baking dish with butter.
- Pour into the baking dish.
- Evenly sprinkle top of pie with grated cheese.
- Bake at 190°C (375°F) for 30 minutes. The top of the Macaroni Pie should be golden brown.
